# Method:
01 - Wash and thoroughly dry all vegetables.
02 - Slice cucumber, carrots, zucchini, and beet into 1/2-inch thick slabs, then dice into 1/2-inch cubes.
03 - Cut bell peppers into 1/2-inch wide strips, then dice into 1/2-inch cubes.
04 - Halve cherry tomatoes if large; leave whole if small.
05 - Arrange vegetable and cheese cubes in colorful layers of three, alternating colors and flavors.
06 - Tie each stack gently with a chive stalk or thin bell pepper strip to resemble a gift box ribbon.
07 - Sprinkle chopped chives or green onions and optional sesame seeds over the stacks.
08 - Arrange stacks on a serving platter and serve immediately.
