01 - 8.8 oz mascarpone cheese
02 - ½ cup heavy cream
03 - ¼ cup granulated sugar
04 - 1 tsp pure vanilla extract
→ Coffee Mixture
05 - ½ cup strong brewed espresso or coffee, cooled
06 - 2 tbsp coffee liqueur (optional)
→ Assembly
07 - 12-14 ladyfinger biscuits, cut to fit mini glasses
08 - Unsweetened cocoa powder, for dusting
09 - Dark chocolate shavings (optional)
# Method:
01 - Whisk mascarpone, granulated sugar, and vanilla extract in a mixing bowl until smooth.
02 - In a separate bowl, whip the heavy cream to medium peaks using an electric mixer or whisk.
03 - Gently fold the whipped cream into the mascarpone mixture until fully incorporated.
04 - Combine cooled espresso and coffee liqueur in a shallow dish.
05 - Quickly dip each ladyfinger piece into the coffee mixture without soaking.
06 - Place a dipped ladyfinger at the bottom of each mini glass.
07 - Spoon or pipe a layer of mascarpone cream over the ladyfingers.
08 - Repeat with another dipped ladyfinger and mascarpone cream layer.
09 - Smooth the tops and refrigerate for a minimum of two hours to set.
10 - Before serving, dust with cocoa powder and optionally garnish with dark chocolate shavings.
